Indian cardamom is used mainly by the local spice industry, while the crop harvested in Guatemala is more commonly exported.

Cardamom belongs to the ginger family. It grows best in shade and an individual plant lives for an average of seven years. It usually begins producing fruit two to three years after planting, with 10–20 cardamom seeds developing in each pod. Harvest typically runs from September to February, and most harvested cardamom is sold on the spice market. The essential oil is obtained from the seeds inside the pods. The outer wall of the pod is green, thin and papery, while the seeds inside are small and black. The pods are dried for about 36 hours before being sold for either spice production or distillation. After drying, cardamom pods weigh only about one fifth of their fresh weight. The essential oil is then obtained from the seeds by steam distillation over several hours.

//cdn.shopify.com/s/files/1/0989/7161/5609/files/690-1_doterra-kardamom-cardamom-illoolaj-5ml_7d9e8ac6-78e3-4d61-97ce-f12c4c5b71bc.png?v=1775206431
